Delicious Zucchini Bread- Circa 1979

This recipe was taken out of the “Cook for Calvary” cookbook. Printed in Iowa Falls, IA in 1979 by The Ladies Auxiliary of Calvary Bible College. When I want a recipe to turn out right the first time, I go to the books. The cookbooks my Grandmother gave me. Written by women with years of experience in the kitchen. Sharing their tips on how to bake, saute, chop, that have been passed down from Generation to Generation.

  This was the first time making this particular bread. Made from fresh Zucchini picked from our garden. And of course, keeping my Grandmother in mind, I made this yummy treat with some extra Love!DSC02057

Ingredients:

2 Cups Sugar
3 Eggs
1 Cup Oil
2-3 Tsp. Vanilla
2 Cups Grated Squash and Rind
1 Tsp. Salt
3 Cups Flour
1 Tsp. Baking Soda
1/4 Tsp. Baking Powder
3-4 Tsp. Cinnamon
Nuts if Desired

Directions:

Cream Sugar, Eggs and Oil. Once smooth add in Squash and Vanilla. Sift the dry ingredients (salt, flour, soda, powder and cinnamon) and add to mixture. When Lumps are all gone you may add the nuts if you want them. Grease and flour two loaf pans: pour mixture in.Bake at 350° for 45-60 minutes. When finished let cool in pans for about 20 minutes and then remove from pans.DSC02053 DSC02054
